When I came back from Iraq in January, everyone I knew had questions about the political and military situation. What was it like? Are we ever going to leave? Did you ever get blown up? Then I talked to my friend, Hungry Editor, Michael Nagrant, who after hearing that I was OK, wanted to know what the food situation was like while I was on deployment. Here’s the breakdown.

As a point of reference, I was based in one of the larger FOBs (Forward Operating Bases) called Taji or Camp Cooke. Taji is an enormous complex (which can be viewed from Google Earth), though the Coalition Forces utilize only a small portion of the base. There were two Dining Facilities or DFACs on the base serving essentially the same thing. In most DFACs there’s a short order line serving hamburgers, grilled cheese, French fries, the common eats you’d find at a fast food restaurant, and the main line.

The main line changed daily for lunch and dinner, and that’s where we saw the bulk of our Army meals. We were served everything from spaghetti to lasagna to fried chicken to steak. There are certain meals that can be counted on…for Sunday lunch/brunch it was surf and turf. The lobsters were small and hard but it was still lobster and we were in Iraq, so you can’t really complain much, though it is a soldier’s God given right to complain. I can’t answer as to the actual quality of the steak since I wasn’t brave enough to try it. The other constant meal on Sunday was Mexican night where the Army served up chicken meat that looked like leftovers from the past week’s supply run. I was a wussy when it came to that meal too, and Sunday night was usually a Subway night. (Taji has a Subway, Pizza Hut, and Burger King)

Breakfast, on the other hand, was exactly the same everyday. There were eggs to order: an omelet, over easy, fried, or whatever your preference, a choice of meat: bacon, sausage patty, sausage link, and sometimes (at least in Iraq) turkey links, and a type of potato which was usually home fries or hash browns. The decision to serve pancakes, French toast, or waffles was usually the only breakfast discretion that Army cooks had, which they wielded with impunity, since I usually craved a fluffy pancake only to be served up a hard cold waffle.

Outside of the base, I was involved in many different operations which allowed me to experience Iraqi food and cuisine. Operation Melon was successful in procuring well, you guessed it, a melon from a guy selling it from a cart by the side of the road. Operation Chicken was never fulfilled. Operation Bread, on the other hand, was extremely successful. The Iraqis make this type of pita bread that seems to be popular all over the country and across all religious lines. This could in fact, be the solution that the Bush Administration has been desperately looking for these many months: a Marie Antoinette type character to make some kind of unifying “Let them eat bread” statement. That’s just a theory though.

On many occasions, we had the pleasure and privilege (it was not always a pleasure or a privilege but we occasionally try to be diplomatic) of dining at the home of an Iraqi who was trying to manipulate and lie to us, or to whom we were trying to lie or manipulate. (Isn’t international relations fun?) These meals would include a heaping pile of rice with spices, nuts, and raisins, and different meats. Fish was usually served whole and chickens were halved.

My favorite meal was the kabobs. I am generally not a big fan of lamb meat. Anything called mutton doesn’t sound that appealing, but the paprika and salt spiced kabobs served right off the grill were amazing. The traditional Iraqi style of eating them was to take one or two kabobs off the stick and stuff them into the Iraqi pita bread with some rice and veggies, which you had to be very careful of, because if anything was going to make you sick, it was the veggies. Occasionally, we would have some pickled (the Iraqis seemed to like to pickle almost everything) veggies. You stuffed that all together, took a really big bite, and washed it down with Coke followed by a glass of chi (Iraqi tea which was served in tiny little glasses with tons of sugar). I was in heaven. Now that I’m back in Kansas I realize that they don’t know what a real kabob is, though they do serve a great steak.

I am only a ‘little’ older than most folks on this site, but my Dad was WWII, and my sons chose to go college. I have a nephew in the Navy who disappears for weeks (sometimes months) at a time (He Navy diver), and I shudder to think what would happen to ALL of us, if young men didn’t take up the cause, and go ‘out there’ for those of us back home. I speak English because my Dad helped make it so. I am not under foreign control because the Korean, Cuba Missile Crisis, Bay of Pigs, Vietnam, Granada, Various Police Missions in the Middle East, Gulf War, Iraqi/Iran, Afganistan, and any other ‘missions’ I am not familiar with, took place so I could go about my daily life…………..free, safe, and living the American dream. I know I probably have ‘history’ out of order, and missed quite a few military actions that kept me safe, BUT know this……… I salute you, I love you, and God bless you all.
